Traya Dairy sells traditional palkova (Jaggery Palkova and Sugar Palkova) and is expanding into a full range of dairy products and traditional sweets. Our product roadmap includes paneer, butter, ghee, milk cake, kalakand, basundi, pedha and khoa. All products are manufactured to FSSAI standards and shipped across India from our Kadapa facility.
Traya Dairy sources fresh milk directly from dairy farmers in and around Kadapa, Andhra Pradesh. Milk is procured from farmers who deliver to our manufacturing plant, where it is tested for fat and SNF (Solids-Not-Fat) before processing. This direct farm-to-plant model ensures transparency, fair payment to farmers, and freshness from milking to slow-cooking.
Traya Dairy palkova is manufactured at our facility in Kadapa, Andhra Pradesh, India. A second manufacturing plant in Tamil Nadu is planned to expand capacity and serve the southern market more efficiently. Yes. Traya Dairy Private Limited operates under FSSAI (Food Safety and Standards Authority of India) compliance. Our FSSAI licence number is displayed on every product label and at the footer of trayadairy.com, as required under the Food Safety and Standards Act, 2006. We also follow food safety practices aligned with HACCP and ISO 22000 principles.

Palkova is a traditional South Indian milk sweet made by slow-cooking full-fat milk until it reduces to a dense, grainy, caramel-coloured solid. It is also called therattipal, paal khova, or milk khoa in different regions of India. Authentic palkova uses only two or three ingredients — milk, a sweetener (sugar or jaggery), and sometimes cardamom. It originated in Tamil Nadu and is most famously associated with the town of Srivilliputhur, whose palkova received the Geographical Indication (GI) tag in 2019.
Srivilliputhur Palkova is a variety of palkova originating in Srivilliputhur, a town in Virudhunagar district of Tamil Nadu, India. It received the Geographical Indication (GI) tag from the Government of India in 2019 because of its unique preparation method, distinct grainy texture, and the traditional artisanal slow-cooking practice that has been passed down for over a century. Traya Dairy produces palkova in this same tradition.
Jaggery Palkova is sweetened with natural jaggery (unrefined cane sugar) and has a darker brown colour, earthy aroma, and mineral-rich profile. Sugar Palkova is sweetened with refined white sugar, has a classic pale-gold colour, a cleaner milky taste, and a slightly grainier texture. Jaggery Palkova is preferred by health-conscious customers because jaggery retains iron, magnesium and potassium. Sugar Palkova is preferred for its traditional festive taste and longer visual shelf appeal.

Approximately 4 to 5 litres of full-cream milk are needed to produce 1 kilogram of authentic palkova. This 4:1 to 5:1 milk-to-palkova conversion ratio is why genuine palkova is milk-dense, rich in protein and calcium, and priced higher than sweets made with milk powder. Traya Dairy Palkova is slow-cooked in traditional wide iron pans over a wood fire — not gas, not electric, not steam-jacketed kettles. Wood-fired slow cooking imparts a faint smoky depth, encourages the Maillard browning that gives palkova its characteristic caramel notes, and follows the centuries-old method used by traditional palkova artisans. Each batch is stirred continuously by hand for several hours.

There are no preservatives, no artificial colours, no flavour enhancers, no milk powder, no vanaspati, and no added ghee or butter. Cardamom is added in small quantities as an optional aromatic. This is the same minimal-ingredient recipe followed in the Srivilliputhur tradition.
No. Traya Dairy Palkova contains zero preservatives and zero artificial colours. The natural golden-brown colour of Sugar Palkova and the deep caramel colour of Jaggery Palkova come entirely from the Maillard reaction that occurs when milk proteins and sugars are slow-cooked together over a wood fire in a traditional iron pan.
Palkova is a concentrated dairy sweet and a natural source of protein, calcium, vitamin A, vitamin B12, vitamin D, and riboflavin, because one kilogram of palkova typically uses 4 to 5 litres of whole milk. However, it is calorie-dense (approximately 380 to 420 kcal per 100 grams) due to milk fat and sugar content. It is best consumed in moderation as a traditional dessert. Jaggery Palkova is marginally better for iron and mineral intake compared to Sugar Palkova.
Traya Dairy Palkova contains natural sugar (Sugar Palkova) or jaggery (Jaggery Palkova) and is not positioned as a diabetic-safe product. Diabetic customers should consult their physician or registered dietitian before consuming palkova.
