About Traya Dairy — Authentic Palkova, Wood-Fired and Honest
Traya Dairy is a dairy company on a simple mission: bring the Srivilliputhur palkova tradition — honest, wood-fired, two-ingredient milk sweets — into every Indian home, unchanged by shortcuts and unspoiled by preservatives. Our brand promise is Purity Guaranteed.
Our Story
Palkova is not just a sweet. In Tamil Nadu, it is a memory. A tin opened at Pongal, a piece pressed into a child's palm after temple, a small square served after a family meal with filter coffee. For over a century, the town of Srivilliputhur in Virudhunagar district has been the spiritual home of this sweet, so much so that in 2019 the Government of India awarded Srivilliputhur Palkova the Geographical Indication (GI) tag — an official recognition that its taste belongs to a place, a tradition, and a method of slow-cooking in iron pans that cannot be replicated by industrial shortcuts.
But as palkova travelled outside Srivilliputhur, it changed. Milk powder replaced fresh milk. Vanaspati replaced ghee. Preservatives extended shelf life but dulled taste. The three-generation tradition of slow-cooking whole milk for hours over a wood fire — the reason palkova tastes the way it does — was quietly replaced with steam kettles, gas burners, and chemical helpers. Traya Dairy exists to refuse those shortcuts.
We are a private limited company incorporated on 22 March 2026 under the Companies Act, 2013, registered with the Registrar of Companies, Chennai, with Corporate Identification Number U46302TN2026PTC191188. Our registered office is at 23/28, Govindraj Street, S.V Nagar, Ambattur, Chennai, Tamil Nadu — 600053. Our manufacturing facility is in Kadapa, Andhra Pradesh, where we source milk directly from local farmers and slow-cook palkova over wood fire. A second manufacturing plant in Tamil Nadu is planned.
What We Make
Today, Traya Dairy sells two flagship products direct-to-consumer across India through our online store:
- Jaggery Palkova — milk slow-cooked over wood fire with pure natural jaggery. Earthy, mineral-rich, deep caramel.
- Sugar Palkova — milk slow-cooked over wood fire with pure sugar. Classic, pale-gold, melt-in-mouth grainy.
Every kilogram of our palkova uses 4 to 5 litres of full-cream milk. Nothing else is added or subtracted. No milk powder. No preservatives. No artificial colours. No vanaspati. Just milk, a single sweetener, and time over fire.
Our product roadmap includes traditional paneer, butter, ghee, kalakand, milk cake, basundi, pedha and khoa.
Our Farm-to-Plant Process
- Farmer-direct milk procurement. We source milk directly from dairy farmers in and around Kadapa, Andhra Pradesh. Farmers deliver fresh milk to our plant where every batch is tested for fat and SNF (Solids-Not-Fat) before payment — the same transparent two-axis model pioneered by India's dairy cooperative movement.
- On-site quality testing. Each batch is graded for fat percentage and Solids-Not-Fat content the moment it arrives. Substandard milk is rejected; farmers are paid based on the quality they bring.
- Wood-fired slow cooking. Milk is poured into traditional wide iron pans and slow-cooked over a wood fire for several hours. Our artisans stir continuously with a long wooden paddle, scraping the sides so the milk reduces evenly and develops the Maillard-reaction caramel notes that define authentic palkova. Wood firing — not gas or steam — gives our palkova its faint smoky depth and traditional character.
- Sweetening. At the precise point of reduction, jaggery or sugar is folded in. Cardamom is added for aroma. The mixture is cooked just until it reaches the signature grainy consistency.
- Hot-fill vacuum packing. Palkova is packed hot into food-grade, vacuum-sealed containers immediately after cooking. The hot-fill plus vacuum approach removes oxygen and locks in freshness, giving our palkova a 45-day shelf life at ambient temperature and 60 days frozen — without any preservatives.
- Pan-India shipping. Orders ship via reliable express courier partners and reach customers in 2 to 5 days. The vacuum seal protects the product through transit.
Why Wood Fire?
Most modern dairies use gas burners or steam-jacketed kettles because they are faster, cheaper, and easier to control at scale. We use wood because it changes the taste. Wood fire delivers a slow, uneven heat that drives the Maillard reaction differently from a clean gas flame — the sugars and milk proteins on the pan walls caramelise more deeply, the milk solids develop a subtle smoky aroma, and the long cooking time builds the grainy structure that defines authentic palkova.
It is slower. It is more labour-intensive. It is also exactly how Srivilliputhur artisans have been making palkova for over a hundred years. We do it because nothing else tastes the same.

Our Values
- Purity Guaranteed. If we cannot make it without a shortcut, we do not make it.
- Traceable milk. Every litre of milk we buy is tested, paid for on the basis of fat and SNF content, and recorded.
- Fair to farmers. We work directly with dairy farmers around our Kadapa plant and aim to partner with Farmer Producer Organisations (FPOs) and Self-Help Groups (SHGs) as we scale.
- Compliance first. We operate under FSSAI food safety rules, the Companies Act 2013, GST, and all applicable labour and environmental regulations.
- Tradition, respected. Palkova belongs to Srivilliputhur. We make it in the wood-fired tradition that town gifted the world.
